General Manager, Four Frogs Crêperie
Originally from France, Marianne has been living in Australia and Sydney for seven years; She became a citizen last year.
Hospitality is much more than a passion for her. Over the last 20 years, she gained valuable experience by working for Alain Ducasse Enterprise in Paris, Accor group in Brittany, Marriott company in French Polynesia and the Luke Mangan company in Sydney. She led major operating projects for major luxury establishments, such as being a part of the preopening project team of 'Le Jules Verne' Restaurant on the Eiffel tower.
Marianne had the privilege to be a part of the Appetite for Excellence program with Lucy Allon for a year. Appetite for Excellence being a national hospitality award; they promote young Australian talent in hospitality. She had the opportunity to work with the best chefs, restaurateurs, restaurant Manager and professional of our industry in Australia.
Through these various experiences and her international posting. She has developed her management skills and knowledge of the industry at large.
She is the new General Manager of Four Frogs. Overviewing the proper operational and financial development of the four shops. Making sure the fantastic team in every shop have the right tool to do an excellent job.
Marianne has a strong focus on customer satisfaction, staff communication and training, quality product locally sourced.
I have my 100 quality point focus: 33.33% Great product, 33.33% Great Service, 33.33% Great atmosphere. Those points must be similar in all our shops.
As an activist she is supporting the local farmers, Local Breweries, Spirit, fresh produces, Wineries and protecting the environment. Even more today, as we live in a very uncertain and frighting time with COVID. It is necessary to rethink our ways of living and consuming and focus on what is essential and help each other.
Being a part of Four Frogs Creperie with such tremendous and motivated team, it is a real privilege and excellent source of inspiration for me. We have very talented staff, I really like giving them the best support to reach their full potential. My role is to answer the questions, how we make our way through Covid and how do we adjust/adapt our business to the crise
